Wagyu sirloin (西冷扒), 300g — the classic steak cut made extraordinary by Wagyu marbling. A leaner profile than ribeye with a clean, intense beefy flavour. Slice thinly after cooking for a stunning Wagyu rice bowl, or serve whole for a proper steak dinner. Choose your marbling grade: MBS4-5, MBS6-7 or MBS8-9/9+.
Cooking Tips: Season with sea salt. Pan-sear on high heat, 2 minutes per side for medium-rare. Rest 3 minutes, slice thinly against the grain. Excellent over steamed rice with a drizzle of soy and sesame oil.
